One Click Dubai technician repairing a commercial ice machine in a restaurant kitchen

Overview

One Click Dubai repairs commercial ice machines for restaurants, cafes, hotels, bars, caterers, clinics and fish and food businesses across Dubai. A technician is sent the same day, and within the hour when a working kitchen or bar has no ice.

A commercial ice machine is production equipment. When it stops, drinks service stops with it, and when it runs dirty it is a food safety problem. This page is written for the person responsible for one: what to do in the first ten minutes of a breakdown, how the machine is diagnosed, which repairs are routine and which are major, and how installation, water and cleaning decide how often you will need us.

We repair cubers, flakers and nugget machines of every make with genuine parts, install new machines, and maintain them under contract. If the ice maker in question is inside a cafe or staff-room refrigerator, see fridge ice maker repair.

Machine down: the first ten minutes

When a commercial ice machine stops in service, five quick checks either restart it or give the technician what he needs to arrive with the right part. None of them involves opening the machine.

1
Look at the display or lights

Write down any code, the number of beeps, or which lights are on or flashing, before anyone resets it.

2
Check the mode switch

Machines are often left in clean, wash or off after a cleaning shift.

3
Check water

Is the supply tap open? Has there been plumbing work or a building water shutdown? Is the filter gauge in the red?

4
Check the air

Is the condenser filter matted with dust or grease? Has stock been stacked against the vents?

5
Check the bin

Is ice piled against the bin sensor or curtain? Is the bin drain backed up?

6
Reset once

Switch off for a few minutes and on again. If the machine stops again with the same signal, leave it off and call.

Then protect the ice you have. Keep the bin door shut, and do not top the bin up with bagged ice unless the bags are food grade and the scoop is clean. Bagged ice tipped in from the floor is the commonest source of contamination we see during a breakdown.

Tell us the brand and model, the code or signal, and what the machine last did. That is usually enough to load the right valve, sensor, pump or board.

Types of commercial ice machine and what goes wrong with each

Commercial ice machines divide by how they are built and by the ice they make. Each combination has a characteristic set of faults, and knowing it shortens the diagnosis.

TypeWhere it is usedCharacteristic faults
Modular cuber on a storage binRestaurants, hotels, banquetingScaled evaporator, harvest faults, thickness or float sensor, water pump, bin control
Self-contained undercounter cuberCafes, bars, small kitchensBlocked condenser from floor-level dust, drain faults, low water level
Flake ice machineFish counters, food display, bakeries, laboratoriesAuger bearings and water seal, gear motor, scaled cylinder
Nugget or chewable ice machineCafes, juice bars, healthcareBearings, extruder head wear, gear motor overload
Ice and water dispenserHotel corridors, staff rooms, clinicsDispense motor, chute sensor, agitator, drain
Remote-condenser systemLarge kitchens where heat and noise are sent outsideRooftop condenser fouling, fan failure, long line set leaks, head pressure control
Water-cooled machineSites with poor ventilationWater regulating valve, scaled condenser, high water use

Air-cooled machines are by far the most common in Dubai kitchens, and they are the most sensitive to heat. A machine's rated output is measured in a mild room with cool inlet water. A kitchen at 35 degrees C with warm supply water in summer will get noticeably less, which is why a machine that copes in January falls short in August without anything being broken.

How a commercial ice machine is diagnosed

A commercial ice machine is diagnosed by timing it. Each model has a normal freeze time and harvest time for a given air and water temperature, and comparing the machine against those figures shows which system is at fault before any part is tested.

MeasurementNormalIf it is wrong
Freeze timeWithin the maker's range for the conditions, typically 10 to 30 minutesLong freeze: dirty condenser, low refrigerant, leaking hot gas or inlet valve, warm water, scaled plate
Harvest timeTypically 1 to 3 minutesLong harvest: scale, weak hot gas flow, low refrigerant, cold room, sensor fault
Batch weightStated per cycle for each modelLow: thin ice from a thickness or water level fault
Water level and flowEven sheet over every row of the plateDry rows: blocked distributor or weak pump
Suction and discharge pressureFollows a known pattern through the cycleShows undercharge, overcharge, restriction or a weak compressor
Air and water temperaturesRecorded at the machineExplains seasonal shortfalls
Voltage and currentWithin the data plate figuresLow voltage or high current points to supply or motor faults

The order matters. Water and airflow are checked and put right first, because a starved or scaled machine gives refrigeration readings that look like a gas fault and are not. Gauges go on only when the simple causes have been ruled out, since every connection to a small sealed system loses a little refrigerant.

Not making ice, or not making enough

A commercial ice machine not making enough ice is a more common complaint than one making none. Low production has six usual causes, and four of them are conditions around the machine, not failed parts.

CauseHow it showsFix
Dirty condenser or air filterHot air from the vents is weak, long freeze, high temperature shutdownsClean. Set a monthly filter wash
Hot room or poor clearanceFine at night, short during serviceVentilation, relocation or a remote condenser
Warm inlet waterSummer shortfallShade or insulate supply pipework. Allow for it in sizing
Scaled evaporator and water systemIce clings, harvest drags, cubes misshapenDescale and sanitise
Water starvationThin cubes, dry rows on the plate, filter gauge lowFilter, inlet valve, pressure
Low refrigerant chargeIce forms on part of the plate only, very long freezeFind and repair the leak, then recharge
Leaking hot gas or water inlet valveLong freeze with everything else cleanReplace the valve
Machine too small for the businessBin empty at the same hours every dayLarger bin, second machine or a bigger head

When there is no ice at all, the split is simpler. A machine that runs with water and never freezes has a refrigeration fault. A machine that freezes and will not drop the ice has a harvest fault. A machine that sits idle has a sensor, safety or control fault. Our guide to a commercial ice machine not making ice follows each branch.

Harvest faults: ice that will not release

A harvest fault is ice that forms normally and then stays on the evaporator, so the machine times out and shuts down. It is the single most common reason a commercial cuber stops, and scale is behind most cases.

CauseWhat happensRepair
Scale on the evaporatorIce grips the roughened surface and will not slideDescale. Replace the plate if the plating has gone
Hot gas valve not openingThe plate never warms in harvestReplace the valve or its coil
Hot gas valve leaking throughFreeze drags on, ice is thin at the topReplace the valve
Low refrigerantNot enough hot gas to warm the plateLeak repair and recharge
Ice too thick or bridgedThe slab locks around the plate dividersReset the thickness control. Check the probe
Harvest assist faultThe pusher, clutch or water rinse that helps the ice off is not workingRepair the assist
Cold room or cold water in winterHarvest slow in a chilled storeRelocate or adjust
Harvest sensor faultThe machine does not see that the ice has gone, or ends harvest earlyClean or replace the curtain switch, thermistor or probe

Do not chip stuck ice off an evaporator. The plating is thin and the tubes beneath it carry refrigerant. Switch the machine off and let it melt, or pour lukewarm water over it. A scratched plate collects scale in the scratch and sticks there for the rest of its life.

Flake and nugget machines

Flake and nugget machines have no harvest cycle. A motor-driven auger turns inside a refrigerated cylinder all the time the machine runs, and the parts that carry that load are where these machines fail.

SymptomCauseRepair
Squeal, groan or grindingTop or bottom auger bearing worn, often after the water seal has let water into itBearing and seal kit. Do not run the machine
Water dripping from under the cylinderWater seal failedNew seal, and inspect the bearing below it
Stops, gear motor hotScaled cylinder making the auger work too hard, or ice packing in the chuteDescale. Clear the chute. Check motor current
Wet, soft iceExtruder or breaker worn, low refrigerant, scaleInspect and replace worn parts
Low outputScale, dirty condenser, low water level in the reservoirClean. Float valve
No water in the reservoirFloat valve stuck or supply blockedClean or replace
Auger turns, no iceRefrigeration faultLeak test and repair

A flaker that is run on with a noisy bearing lets the auger wander, and the auger then scores the cylinder wall. Bearings and a seal are a routine repair. An auger and evaporator cylinder together often cost more than the machine is worth. Maker schedules call for the bearings and seal to be inspected yearly for that reason.

Ice dispensers and remote-condenser systems

Ice dispensers and remote-condenser machines add parts that a plain cuber does not have, and those parts account for most of their callouts.

Ice and water dispensers

A dispenser stores ice in a closed hopper and delivers it through a chute when a lever or sensor is touched. An agitator keeps the ice loose and a motor-driven wheel or auger moves it to the chute.

SymptomCauseRepair

Remote-condenser machines

On a remote system the ice-making head stays in the kitchen and the condenser sits on the roof or an outside wall, joined by a refrigerant line set. That removes heat and noise from the kitchen. It also puts the condenser in the sun and the dust, where nobody looks at it.

Rooftop condenser coils need washing several times a year. A sand-clogged coil shuts the machine down on high pressure on the first hot afternoon.
The condenser fan motor runs in full sun and is a common failure.
Long line sets have more joints and more places to leak, and the charge is larger and must be weighed in exactly.
A head pressure control valve keeps pressures up in cool weather so the machine can still harvest. When it fails, winter nights bring harvest faults.

Leaks, drains and the ice bin

Water on the floor around a commercial ice machine comes from the drain in most cases. The machine purges water every cycle and the bin drains melt constantly, so a partial blockage that would go unnoticed elsewhere floods here.

FindingCauseRepair
Water under the binBin drain blocked with slime or the hose saggingClear and support the hose with a continuous fall
Ice sitting in waterBin drain blockedClear. Empty, clean and sanitise the bin
Water running down the front of the binSplash curtain missing or out of place, ice bridged over the plateRefit. Correct the thickness
Leak from the head unit baseSump or reservoir cracked, hose clamp loose, pump sealReplace the part
Drain overflows at the floor gullyShared gully blocked with kitchen wasteClear the gully. Keep the air gap
Bin door will not stay shutHinges or gasket wornReplace. Warm air melts the ice and breeds slime

The machine drain and the bin drain should run separately to the floor drain, each with a fall and an air gap. Joined together, a slow drain lets purge water from the machine back up into the bin.

Refrigeration repairs

Refrigeration repairs are the major jobs: a leak, a failed valve, a blocked metering device or a compressor. They are less common than water faults and cost more, because the sealed circuit has to be opened and then restored to factory condition.

1
Recover the refrigerant

Into a cylinder, not to the air.

2
Find and fix the fault

Leak test with nitrogen and repair by brazing, or replace the failed valve, drier or compressor.

3
Fit a new filter drier

Every time the circuit is opened.

4
Pressure test

With dry nitrogen, held to confirm the repair is tight.

5
Evacuate

With a vacuum pump to a deep vacuum, to remove air and moisture.

6
Charge by weight

To the exact figure on the data plate. Ice machines have small charges and are far less tolerant of error than an air conditioner.

7
Run and time

Freeze and harvest are timed again to confirm the machine is back to its figures.

ComponentSigns of failure
CompressorHums and trips, runs without pumping, draws high current, or is seized
Hot gas valveNo harvest, or long freeze from leaking through
Expansion valve or capillaryEvaporator frosts unevenly or starves
Condenser fan motorHigh pressure shutdowns, hot cabinet
EvaporatorPlating flaked, or a leak in the plate
Head pressure control on remote systemsPoor harvest in cool weather, erratic pressures

A machine that has lost its charge has a leak. Topping it up without finding the leak buys a few weeks and wastes the cost of the gas. We find the leak first.

Water quality and filtration

Water causes more ice machine repairs than every other factor combined. Sediment blocks valves and distributors, minerals form scale, and chlorine in the supply attacks stainless parts and affects taste. A filter sized for the machine deals with all three to a useful degree.

Filter elementWhat it does
Sediment filterStops grit from tank and pipework reaching the inlet valve and float
Carbon blockRemoves chlorine taste and smell
Scale inhibitorSlows mineral scale forming on the evaporator. It does not remove the need to descale
Change cartridges about every six months, or when the pressure gauge after the filter falls.
Size the filter to the machine's water flow. An undersized filter starves the machine as it loads up.
A filter does not sanitise. Slime grows from airborne yeast and mould, not from the water.
Where the supply comes from a roof tank, have the tank cleaned on schedule. Sediment from a neglected tank will defeat any cartridge.

Cleaning, sanitising and food safety

A commercial ice machine must be descaled and sanitised at least every six months, and more often in kitchens with yeast, flour or grease in the air. Ice is classed as food, and Dubai Municipality food inspections include the ice machine, the bin and the scoop.

1
Descale

Circulate the maker's ice machine cleaner through the clean cycle. Use a nickel-safe cleaner on plated evaporators.

2
Strip

Remove and hand-clean the distributor, curtain, water trough, float, probes and tubing.

3
Sanitise

Circulate food-contact sanitiser, then treat every bin surface, the door, the baffle and the scoop.

4
Clean the air side

Condenser, fan blade and air filter.

5
Renew the water filter

And flush it.

6
Record

Date, products used and the technician's findings, for your hygiene file.

What inspectors look for

Pink or black slime on the bin ceiling, the drop zone and the door edge.
A scoop left buried in the ice, or a glass used as a scoop.
Bottles, food or anything else stored in the ice bin.
A drain without an air gap.
No cleaning record.

Staff should wash hands before scooping, keep the scoop in a holder outside the ice, and never return unused ice to the bin.

Installation and sizing

Commercial ice machine installation covers choosing the right capacity, placing the machine where it can breathe, and connecting filtered water, drainage and power correctly. We install and commission machines of every make.

BusinessRough guide to daily ice need
RestaurantAbout 0.7 to 1 kg per cover
Cafe or juice barMore per customer where iced drinks dominate: size from drinks sold
Bar or loungeAbout 1.5 kg per seat
HotelAbout 2 to 2.5 kg per room, more with banqueting
HealthcareAbout 4 to 5 kg per bed
Fish and food displayFrom the display area and the number of top-ups a day

These are common industry rules of thumb, not fixed figures. Add a margin of about 20% for growth, and size for your hottest months, when the machine makes least and customers want most. Storage matters as much as production: a bin that holds the busiest four hours' demand lets a smaller machine catch up overnight.

Leave the air clearances given in the manual on every side that has a vent.
Keep the machine away from ovens, fryers, dishwashers and direct sun.
Provide a dedicated circuit and a local isolator.
Fit a shut-off tap and a filter with a pressure gauge.
Run machine and bin drains separately, with fall and an air gap, or fit a drain pump.

Maintenance contracts

A maintenance contract for a commercial ice machine schedules the cleaning and checks that prevent most breakdowns, and puts the site at the front of the queue when something does fail. We offer contracts for single machines and for groups of outlets.

Visit taskPurpose
Descale and sanitise the water system and binHygiene and reliable harvest
Clean condenser and air filterOutput and compressor life
Change water filter cartridgesProtects valves and evaporator
Time freeze and harvest, weigh a batchCatches a developing fault early
Check water level, sensors, bin control and drainPrevents shutdowns and leaks
Inspect bearings and seal on flake and nugget machinesPrevents auger and cylinder damage
Check electrical connections and motor currentsSafety and early warning
Written service recordFor inspections and your own records

The number of visits is set by the site. A hotel bar in clean air may need two a year. A pizzeria or bakery may need four or six. The visit count, inclusions and response terms are written into each contract.

Cost, downtime and when to replace

The cost of a commercial ice machine fault is the repair plus the ice you have to buy while it is down. That second figure is why a quick, correct first visit matters more than the cheapest quote.

The diagnostic visit is AED 100 plus VAT, with a fixed price given before any work.

We do not rent ice machines. If yours will be down for more than a day while a part arrives, we will tell you at the first visit so you can arrange bagged ice.

We cover all of Dubai, including Dubai Marina, JBR, Palm Jumeirah, JLT, Downtown, Business Bay, Jumeirah, Al Barsha, Dubai Hills and Deira.

Frequently asked questions

Who repairs commercial ice machines in Dubai?

One Click Dubai repairs commercial ice machines of every make across Dubai, the same day and within the hour in an emergency. Call or WhatsApp +971 55 209 9785.

Why is my commercial ice machine not making ice?

It runs without freezing because of a refrigeration fault, freezes without releasing because of a harvest fault, or sits idle because a sensor or safety has stopped it.

Why is my ice machine making less ice in summer?

Hotter air and warmer inlet water lower output on every air-cooled machine. A dirty condenser makes it much worse.

Why is my commercial ice machine leaking water?

A blocked bin or machine drain in most cases. A cracked sump, loose hose or failed drain pump are the others.

How often should a commercial ice machine be cleaned?

At least every six months, and every two to three months in bakeries, pizzerias and bars.

Do you repair restaurant and cafe ice machines?

Yes, along with hotel, bar, catering, healthcare and industrial flake ice machines.
